I kept it simple, just put a little salt in the cavity, roasted at 350 degrees for 90 minutes, basting a few times, and taking the roaster cover off for the last 30 minutes. Our standards for chicken are high. It has to be wonderfully flavorful. The chickens must be all-natural, never receiving antibiotics or growth hormones. We insist on air-chilling in the processing to capture the true chicken flavor.
It’s really important to us that the chickens come from family farms - not factory farms.
I spent over a year looking for a great source of chicken for Heartstone Farm. I wanted to make sure I could stake my reputation on the chicken - and that's why I am so
