Delicious no matter the season, lamb shanks are especially appropriate during the cold winter months, when we turn our attention to hearty soups and stews, Osso Buco and other slow-roasted one-pot dinners.
Shanks are sourced from the front of the lamb leg (fore shanks) and rear of the lamb leg (hind shanks). They derive most flavor from the bone and marrow. The cut is best when slowly braised in a mixture of stock, wine and vegetables until the meat is fall-of-the-bone tender.

Braising lamb shanks might sound a little intimidating, but honestly, it couldn't be easier. After a quick sear, the oven does all the work for you! Lamb shanks can tend to be a tougher cut of meat so to get tender, fall off the bone lamb, it works best to cook them low and slow. They'll braise in a savory tomato sauce that gives the meat so much flavor and the sauce becomes extra silky after the wine and butter gets stirred in. You'll have the most comforting dinner you've had all year!

What is the shank of a lamb?
The shank is the cut taken from the lower section of the lamb's legs and can be from the front legs (foreshank) or the back legs (hind shank). The foreshank may contain part of the shoulder as well as the leg, while the hind shank is only taken from a part of the rear leg.
Is eating lamb shank healthy?
A three-ounce cut of cooked lamb delivers about 25 grams of protein, plus good quantities of potassium and vitamin B-12. It's also a good source of iron, magnesium, selenium, and omega-3 fatty acids. While that's good news, lamb is also a source of saturated fat.
Does Lamb get more tender the longer you cook it?
It depends on the cut. If you cook a lamb shank low and slow, it will become more tender as long as you don't let it dry out. A lamb chop, on the other hand, will reach optimum tenderness at medium rare. After that it will become tougher as it cooks.
