We are huge fans of Oliver Perkins and the amazing charcuterie he makes at his shop, A Small Good in Rockport, Maine. So imagine our excitement when we got a call from him a couple of months ago asking us to supply our grassfed beef for two new salamis.

Aged to perfection, we recently tried them and our first response was “wow” and then we added “our customers will love these.” Thanks to Oliver for letting us share them with you. Both blends of 100% grass fed Heartstone Farm beef and pork belly. Both wild fermented.

Northern spicebush, aka Appalachian allspice a native shrub to Northern America. (Oliver says: We made something similar before but this is better. )
