Our Prime Rib Roasts are dry aged for 14 days resulting in a supremely tender meat that is sweet and juicy. Each roast is then hand-cut and trimmed by our highly skilled butchers.

Pick the date you would like your Prime Rib Roasts shipped. Last shipping week for guaranteed delivery before Christmas is Dec. 18. You can also select a date after Christmas (Choose your delivery week in the calendar at the top of this page.)

We ship via UPS. You will receive an email with a tracking number when your roast is shipped. You do not need to be home at the time of delivery.

We pack and ship your roast frozen direct from our farm in Maine.Ā All of our packaging can be composted or recycled (no styrofoam). Until we pack your box, your turkey is kept in our freezers (at 0 degrees). We use ice blankets and dry ice to keep your precious roast super cold during its trip to you. Our packing team (our neighbors) like to say they are packing every order like it's going to their "favorite aunt."

Cooking Tips

PRIME RIB ROAST COOKING TIPS

1. THAW - Set your roast on a tray and place in the refrigerator. A 5-6 pound roast can take 3 to 4 days to thaw. Allow 2-3 days for a 3-4 pound roast.

2. HEAT OVEN ā€“ Set to 350Ā°F

3. SEASON ā€“ Generously apply kosher salt or your favorite rub.

4. ROAST - Set prime rib in a roasting pan and place in the heated oven. The approximate cook time is 15 to 20 minutes per pound. Temperature is the best way to know exactly when the roast is ready. Leave in oven until the internal temperature of your prime rib corresponds with your preferred finish. 110Ā°F for rare, 120Ā°F for mediumrare, 130Ā°F for medium.

5. REMOVE ā€“ When your prime ribā€™s internal temperature reaches your target temperature, remove it from the oven. Do another temperature check, then cover loosely with foil and let it rest for 20 to 30 minutes. It will continue to cook during this time.

6. SLICE & SERVE ā€“ Cut your rested prime rib against the grain and serve.

100% Grass-Fed

Our beef is 100% grass fed and grass finished. That means our cattle only eat grass. No corn, no grain, no animal by products -just grass.

In the growing season, they feed on the pastures of our 500 acre farm. In the winter, they eat the hay (grass) we harvested from our fields in the summer.

Beware of supermarket beef labeled "grass fed." Most factory-farmed, supermarket beef is fed grain (mainly corn) in the last few months before slaughter (even when itā€™s labeled ā€œgrass-fedā€). While grain will fatten cattle up quickly, it can also make them sick because grains are not their natural feed.

That's why knowing the farmer who raised your meat is so important.

When we say 100% grass fed we mean 100%.
